This healthier red enchilada sauce is so tasty, easy to prepare and of course it is vegan. It uses typical pantry staples. The sauce can be prepared ahead of time and frozen into portions or kept in the fridge for 7 to 10 days. I use it for enchiladas, burritos, etc. This healthier enchilada sauce is big on taste and small on extra additives and preservatives. This recipe is used in the Easy Bean and Corn Enchiladas recipe.
