Oh my goodness! These Cajun-Style Vegan Beans are so delicious you do not need to take a trip to Popeyes! These are so much heathier and full of flavor. We always eat the entire pot. They are delicious the same day but I always tend to like them better the next day after preparing. Either way, please try them!

Equipment

  • 1 Instant Pot

Ingredients
  

  • 2 c red beans, rinsed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 1 tea thyme
  • 1 tea smoked paprika
  • 2 bay leaves
  • 1/4 tea cayenne pepper
  • 1/4 tea black pepper
  • 4 c vegetable broth
  • 1 c water
  • 1 tea red wine vinegar

Instructions
 

  • Place beans in a container. Cover with water and soak for 4 hours. This step is not totally necessary and can be disregarded if time does not permit.
  • Drain water, rinse and place beans in Instant Pot container.
  • Add the remaining ingredients and cook for 45 minutes.
  • It's that simple. ENJOY!
