This Vegan Chocolate Pudding recipe is full of surprises. It is so sweet and creamy and you would never believe that it is made from black beans! Super creamy, sweet, chocolatey and it is full of fiber.

  • 1 blender

Ingredients
  

  • 1 15 oz can black beans, low sodium , drained and rinsed
  • 1/2 cup cocoa powder
  • 3 tbsp maple syrup
  • 1 large dated, pit removed
  • 3 tbsp nondairy milk
  • 1/4 tea salt

Instructions
 

  • Place all ingredients in a blender or food processor and blend until smooth. Blend really well for a smooth texture.
  • Divide among individual serving glasses and chill for at least 1 hour before serving.
  • Just before serving, garnish with fruit topping and mint leaf, if desired.
  • Enjoy!
  • Note: Once the pudding has chilled it will change to a firmer consistency. You can add more plant milk for a creamier texture.
