Ingredients
  

Tofu Scramble

  • 1 12-ounce pkg. of tofu, firm or extra firm
  • 3 garlic cloves, minced
  • 1/2 small to med yellow onion, chopped
  • 1 med red pepper, chopped
  • 2 tbsp water, for sautéing veggies
  • 1 tea chili powder
  • 1 tea nutritional yeast
  • 1 tea ground cumin
  • 1/4 tea salt, or season to taste (optional)

Potatoes

  • 5 baby yellow potatoes
  • 1 pinch of salt (optional)
  • 1/2 tea ground cumin
  • 1/2 tea chili powder

Assembly

  • 4 large flour or preferred tortillas (vegan)
  • 1 tbsp hummus or refried beans
  • 1 med ripe avocado (optional)
  • 1 jar red or green salsa
  • cilantro, for garnish

Instructions
 

Tofu Scramble

  • Add 2 tablespoons of water to a skillet and sauté the chopped onion, minced garlic and red pepper (adding small amounts of additional water as needed).
  • Open the tofu package and place on a few folded paper towels. Slightly press out the liquid and then crumble the tofu into small pieces.

It is delicious, so flavorful, healthy, vegan, very satisfying and a great way to start your day! You can actually enjoy it for breakfast, lunch or dinner.
  • Once the onion has softened, add the crumbled tofu to the onion mixture along with the chili powder, cumin, nutritional yeast and salt. Sauté for 7-10 minutes stirring frequently to slightly brown then remove from heat.

Potatoes

  • Microwave or boil the potatoes until soft. Once soft, cut into bite size pieces and place in a mixing bowl.

  • Toss the potatoes with salt, cumin and chili powder then set aside for assembly.

Assembly

  • Slightly warm the tortilla in a skillet or for a few seconds in the microwave then place on a flat surface.
    This breakfast burrito with scrambled tofu, sautéed veggies, seasoned potatoes, salsa, and avocado can be prepared in approximately 30 minutes!   • Spread a tablespoon of the hummus or refried beans on the tortilla.

  • Top with optional avocado, chopped cilantro and salsa.

  • Tuck in the two ends of the tortilla and then roll into a burrito.
