This breakfast burrito with scrambled tofu, sautéed veggies, seasoned potatoes, salsa and all the trimmings is a great way to kickoff your day! So delicious and easy to make. My family loves these anytime of the day...breakfast, lunch or dinner. Healthy, vegan and delicious!
Add 2 tablespoons of water to a skillet and sauté the chopped onion, minced garlic and red pepper (adding small amounts of additional water as needed).
Open the tofu package and place on a few folded paper towels. Slightly press out the liquid and then crumble the tofu into small pieces.
Once the onion has softened, add the crumbled tofu to the onion mixture along with the chili powder, cumin, nutritional yeast and salt. Sauté for 7-10 minutes stirring frequently to slightly brown then remove from heat.
Potatoes
Microwave or boil the potatoes until soft. Once soft, cut into bite size pieces and place in a mixing bowl.
Toss the potatoes with salt, cumin and chili powder then set aside for assembly.
Assembly
Slightly warm the tortilla in a skillet or for a few seconds in the microwave then place on a flat surface.
Spread a tablespoon of the hummus or refried beans on the tortilla.
Next add the tofu scramble and potatoes.
Top with optional avocado, chopped cilantro and salsa.
Tuck in the two ends of the tortilla and then roll into a burrito.
Continue this procedure for the remaining 3 burritos.
