This breakfast burrito with scrambled tofu, sautéed veggies, seasoned potatoes, salsa, and avocado can be ready in approximately 30 minutes! It is delicious, so flavorful, healthy, vegan, very satisfying and a great way to start your day! You can actually enjoy it for breakfast, lunch or dinner.
Tofu Scrambled Breakfast Burrito
This breakfast burrito with scrambled tofu, sautéed veggies, seasoned potatoes, salsa and all the trimmings is a great way to kickoff your day! So delicious and easy to make. My family loves these anytime of the day...breakfast, lunch or dinner. Healthy, vegan and delicious!
Ingredients
Tofu Scramble
- 1 12-ounce pkg. of tofu, firm or extra firm
- 3 garlic cloves, minced
- 1/2 small to med yellow onion, chopped
- 1 med red pepper, chopped
- 2 tbsp water, for sautéing veggies
- 1 tea chili powder
- 1 tea nutritional yeast
- 1 tea ground cumin
- 1/4 tea salt, or season to taste (optional)
Potatoes
- 5 baby yellow potatoes
- 1 pinch of salt (optional)
- 1/2 tea ground cumin
- 1/2 tea chili powder
Assembly
- 4 large flour or preferred tortillas (vegan)
- 1 tbsp hummus or refried beans
- 1 med ripe avocado (optional)
- 1 jar red or green salsa
- cilantro, for garnish
Instructions
Tofu Scramble
- Add 2 tablespoons of water to a skillet and sauté the chopped onion, minced garlic and red pepper (adding small amounts of additional water as needed).
- Open the tofu package and place on a few folded paper towels. Slightly press out the liquid and then crumble the tofu into small pieces.
- Once the onion has softened, add the crumbled tofu to the onion mixture along with the chili powder, cumin, nutritional yeast and salt. Sauté for 7-10 minutes stirring frequently to slightly brown then remove from heat.
Potatoes
- Microwave or boil the potatoes until soft. Once soft, cut into bite size pieces and place in a mixing bowl.
- Toss the potatoes with salt, cumin and chili powder then set aside for assembly.
Assembly
- Slightly warm the tortilla in a skillet or for a few seconds in the microwave then place on a flat surface.
- Spread a tablespoon of the hummus or refried beans on the tortilla.
- Next add the tofu scramble and potatoes.
- Top with optional avocado, chopped cilantro and salsa.
- Tuck in the two ends of the tortilla and then roll into a burrito.
- Continue this procedure for the remaining 3 burritos.
