Do you like kale? I HATED it when I first went plant-based. But it is funny how quickly our tastes can change. Steaming kale in a small amount of water with some mushrooms and then topping with a small amount of sauce or dressing is my absolute favorite way to eat it. Did you know? A few of the dressing to try and enjoy on steamed kale are “Non” Blue Cheese Dressing and Green Goddess Dressing.
Steamed Kale with Mushrooms
Ingredients
- 1 bag chopped kale, large bag
- 1 8 oz sliced mushrooms, carton
- 1/4 cup water
Instructions
- Place the chopped kale and sliced mushrooms in a colander and rinse with water.
- Place the kale and mushrooms in a large stock pot along with the water.
- Cook over medium heat until a slight boil begins. Then reduce heat and steam for approximately 15-20, minutes adding water as needed.
- Remove from heat and allow to stay in pot until the kale leaves are to the softness or texture preferred.
- Remove to an airtight container and place in the refrigerator for up to a week.
