Sweet, chewy, and full of fiber, these no bake peanut butter balls work perfectly for lunches, backpacking trips, road trips, or a mid-day pick-me-up. Super simple and easy to make and the 6 ingredients are interchangeable to suit anyone's taste.

Ingredients
  

  • 2 c whole rolled oats
  • 1/2 c flax seed
  • 1/2 c raisins
  • 1/2 c peanut butter or nut butter of choice
  • 1/2 c maple syrup or liquid sweetener of choice, e.g. date paste .
  • 1/2 c chocolate chips, dairy free

Instructions
 

  • In a large bowl, combine the oats, flax seeds, raisins, and chocolate chips.
  • Add the nut butter and maple syrup and stir until a sticky dough forms.
  • Using damp hands, form small pieces of dough into balls (you can use a large cookie scoop for consistency, if desired). Continue to wet hands as needed as it keeps the dough from sticking to your hands.
  • Place formed balls onto a cookie sheet lined with parchment paper and place in the refrigerator for 30 minutes.
  • Remove the peanut butter balls and place in an airtight container. Store in the refrigerator up to a week. Enjoy!
