Servings 6 people

Ingredients

  • 1/3 cup apricot preserves
  • 2 tea lemon juice
  • 1/8-1/4 tsp cinnamon
  • 4 cups sliced peaches (I used the jar of peaches of Trader Joes and sliced the peach halves.)
  • 3 tbsp all-purpose flour (I used wheat pastry flour.)
  • 1/2 c oats, quick or old-fashioned
  • 2 tbsp medium ground cornmeal
  • 2 tbsp maple syrup
  • 1 tea pure vanilla extract

Instructions

  • Preheat oven to 375°F.
  • In a medium bowl, mix together the preserves, lemon juice, and cinnamon. Add the peaches and mix gently to coat them evenly.
  • Sprinkle the flour over the top and mix again.
  • Transfer the fruit to a 8" or 9" ungreased pan and bake until the fruit is very tender, about 30 minutes.
  • While the fruit is baking, stir together the oats and cornmeal in a small bowl.
  • Stir together the maple syrup and vanilla and pour them over the oat mixture; mix well.
  • Remove the fruit from the oven and reduce the heat to 350°F. Use your fingertips to crumble and scatter the oat mixture over the fruit.
  • Bake for an additional 15 minutes. Let the cobbler cool for at least 15 minutes before serving.

Notes

I reduced the first cooking time to 20 minutes since a jar of peaches was used instead of fresh.
