Ingredients
1/3
cup
apricot preserves
2
tea
lemon juice
1/8-1/4
tsp
cinnamon
4
cups
sliced peaches
(I used the jar of peaches of Trader Joes and sliced the peach halves.)
3
tbsp
all-purpose flour
(I used wheat pastry flour.)
1/2
c
oats, quick or old-fashioned
2
tbsp
medium ground cornmeal
2
tbsp
maple syrup
1
tea
pure vanilla extract
Instructions
Preheat oven to 375°F.
In a medium bowl, mix together the preserves, lemon juice, and cinnamon. Add the peaches and mix gently to coat them evenly.
Sprinkle the flour over the top and mix again.
Transfer the fruit to a 8" or 9" ungreased pan and bake until the fruit is very tender, about 30 minutes.
While the fruit is baking, stir together the oats and cornmeal in a small bowl.
Stir together the maple syrup and vanilla and pour them over the oat mixture; mix well.
Remove the fruit from the oven and reduce the heat to 350°F. Use your fingertips to crumble and scatter the oat mixture over the fruit.
Bake for an additional 15 minutes. Let the cobbler cool for at least 15 minutes before serving.
Notes
I reduced the first cooking time to 20 minutes since a jar of peaches was used instead of fresh.
