Easy Chickpea Salad Sandwich
This chickpea salad gets its tang from the dill pickles and Dijon mustard. It is a flavorful and hearty meal that is quick and delicious. Great for a meal, picnic, shower or party.
Ingredients
- 1 can chickpeas, 15 oz. drained and rinsed
- 1-2 tbsp tahini
- 1 tea Dijon mustard
- 1 tbsp maple syrup
- 1/4 cup celery
- 1/4 cup dill pickle relish
- salt and pepper to taste
- 8 slices toasted whole-wheat bread
- sliced onions, lettuce, and tomato for garnish
Instructions
- Place the chickpeas in a bowl and mash , leaving a few whole beans.
- Add the tahini, mustard, maple syrup, celery, relish, salt and pepper. Mix to incorporate. Adjust seasonings as needed.
- Toast bread, if desired. Prepare any other desired toppings.
- Scoop about a 1/2 cup of the chickpea salad onto one slice of bread and then add desired toppings. Top with second slice of bread and then repeat process to make the other sandwiches.
Notes
The chickpea salad mixture will keep in the refrigerator for 4-5 days. Also works well on pita chips, cracker, pita bread or a wrap.
