These vegan chocolate oatmeal breakfast bars are so easy to make and it makes a great meal prep item. This recipe makes six servings in all. Chocolate Breakfast Oatmeal Bars
Ingredients
- 1 flax egg (1 tbsp ground flaxseed & 3 tbsp water
- 2-3 ripe bananas, mashed (about a cup)
- 1/3 c cacao powder
- 1/4 c nut butter
- 1/4 c maple syrup or liquid sweetener
- 1 tea vanilla extract
- 1 tea baking powder
- 1/2 tea cinnamon
- 1/2 tea salt
- 1-3/4 c plant-based milk
- 3 c old fashioned oats
Instructions
- Preheat oven to 375°.
- Grease a 9-inch cake pan and set aside.
- In a small bowl, whisk together the tablespoon of flax seed with 3 tablespoons of water. Set aside to thicken.
- In a mixing bowl, mash your bananas.
- To the bananas, add in the cocoa powder, nut butter, maple syrup, vanilla, baking powder, cinnamon, and salt. Whisk everything together until uniform batter forms.
- Next whisk in the plant-based milk until smooth.
- Add in the 3 cups of rolled oats and stir until combined.
- Pour the batter into a prepared cake pan and bake for about 30-35 minutes or until cooked through.
- Serve warm with more maple, syrup, nut butter and non-dairy-milk. ENJOY!
