Chocolate Breakfast Oatmeal Bars

These vegan chocolate oatmeal breakfast bars are so easy to make and makes a great meal prep item. This recipe makes six servings in all. Naturally sweet with a touch of nut butter, the bars are hearty and super satisfying. If you like chocolate and you like oatmeal, you will definitely like this recipe.

Ingredients
  

  • 1 flax egg (1 tbsp ground flaxseed & 3 tbsp water
  • 2-3 ripe bananas, mashed (about a cup)
  • 1/3 c cacao powder
  • 1/4 c nut butter
  • 1/4 c maple syrup or liquid sweetener
  • 1 tea vanilla extract
  • 1 tea baking powder
  • 1/2 tea cinnamon
  • 1/2 tea salt
  • 1-3/4 c plant-based milk
  • 3 c old fashioned oats

Instructions
 

  • Preheat oven to 375°.
  • Grease a 9-inch cake pan and set aside.
  • In a small bowl, whisk together the tablespoon of flax seed with 3 tablespoons of water. Set aside to thicken.
  • In a mixing bowl, mash your bananas.
  • To the bananas, add in the cocoa powder, nut butter, maple syrup, vanilla, baking powder, cinnamon, and salt. Whisk everything together until uniform batter forms.
  • Next whisk in the plant-based milk until smooth.
  • Add in the 3 cups of rolled oats and stir until combined.
  • Pour the batter into a prepared cake pan and bake for about 30-35 minutes or until cooked through.
  • Serve warm with more maple, syrup, nut butter and non-dairy-milk. ENJOY!

Notes

Serve with: additional nut butter, fruit, or maple syrup.
