This simple to prepare chocolate mug cake is just the right size for a special sweet treat.  So yummy, chocolatey and delicious. It literally takes minutes to prepare. The frosting is dairy-free chocolate chips and/or a spoonful of peanut or almond butter. The chocolate cake is a single serving and sure to please any chocolate lover. It is also oil free and dairy free.

The oat flour can be purchased at the store or made from whole oats. To make the oat flour, process the whole oats in a Vitamix or food processor until it becomes a flour like substance. Store in an airtight container.

Ingredients
  

Cake Mix

  • 3/4 c oat flour
  • 3/4 c coconut sugar
  • 3/4 c cacao powder
  • 1/2 tbsp baking powder, aluminum free
  • 1/4 tsp salt, if desired

Mug Cake

  • 1/4 c cake mix plus
  • 1 tbsp cake mix
  • 2 tbsp plant-based milk (almond, soy or preference)
  • chocolate chips, dairy-free, if desired
  • 1 tbsp peanut or almond butter, if desired

Instructions
 

  • To make the chocolate mug cake mix, simply add all ingredients to glass jar and stir, or place the lid on the jar and give it a good shake until all ingredients are thoroughly mixed through.

  • To prepare one chocolate mug cake, place 1/4 cup + 1 tablespoon of the cake mix in a mug. Add 2 tablespoons of milk and a few dairy free chocolate chips and stir well to combine.

  • Place in the microwave to 30 seconds. Allow it rest for a few seconds and then microwave again for 10-30 seconds (depending on the strength of your microwave).
  • It is ready when there is no longer any raw batter in the center.

  • Top with a spoon of your favorite nut butter and a few more dairy-free chocolate chips. Then ENJOY!
