Oil-Free Basic Hummus
This basic recipe is simple and delicious and a great hummus to have on-hand. It is oil-free and tahini free. It is versatile and can be used as a dip for veggies and pita bread, a spread for sandwiches or to top a salad. It is fast and easy to prepare.
Equipment
- 1 Vitamix, high powered blender, or food processor
Ingredients
- 2 cans chickpeas, drained and rinsed
- 6 tbsp aquafaba - liquid from beans
- 4 tbsp lemon juice
- 2 garlic, cloves (adjust to personal taste)
- 1 tea ground cumin
- 1 tea garlic powder
- 1 tea onion powder
- 1/4-1/2 tsp salt (season to taste)
Instructions
- Drain and rinse the chickpeas (reserving the liquid). Then place in blender/food processor.
- Add the remaining ingredients to the blender and process for 1-2 minutes or until the chickpeas are smooth. If you are not using a high powered blender/processor, it may be necessary to scrape the sides of the blender a few times while processing.
- Process until the hummus reaches your desired consistency.
- This hummus is great on fresh vegetables, as a sandwich spread or as a salad topper.
- It will last in the refrigerator for 7-10 days or in the freezer for approximately 6 months.
