Ingredients
  

Lentil Loaf

  • 1 cup dry lentils, green or brown
  • 2-½ cups vegetable broth, low sodium
  • 3 tbsp ground flaxseed
  • 1/3 c water
  • 2 tbsp water of veggie broth (sautéing vegetables)
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 small red pepper, finely diced
  • 1 carrot, grated
  • 1 celery rib, finely diced
  • 3/4 cup  cups whole oats
  • 1/2 oat flour or finely ground oats
  • 1 tea dried thyme
  • 1 tea  garlic powder
  • 1 tea  onion powder
  • 1 tea cumin
  • 3/4 tea smoked paprika
  • salt and pepper to taste, optional

Glaze*

  • 3 tbsp tomato sauce
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar

Instructions
 

  • Begin by preparing the lentils. Rinse the lentils and then add to a large pot along with 2-1/2 cups of vegetable broth. Bring to a boil, reduce heat, cover and simmer for about 40 minutes, stirring occasionally. Once done, remove the lid and set aside to cool for about 15 minutes. Do not drain any standing liquid as they will thicken a bit upon standing.
  • Preheat oven to 350°.
  • In a small bowl, combine the ground flaxseed and 1/3 c of water. Set aside for at least 10 minutes to thicken.
  • In a sauté pan, heat 2 tbsp. of water or veggie broth over medium heat. Sauté the onion, bell pepper, carrots and celery for about 5 minutes. Add in the minced garlic and cook for an additional minute. Then add the spices and mix well to incorporate. Set aside to cook.
  • Using an immersion blender or vegetable masher, blend/mash approximately 3/4 of the lentils.
  • Combine the sautéed vegetables, lentils, oats, oat flour, flax egg and mix well. Taste of the mixture and adjust the spices along with salt and pepper, as needed.
  • Place the mixture in a 9 x 5 loaf pan that has been lined with parchment paper, leaving it overlapping for easy removal later. Press down firmly filling in along the edges too.

Glaze:

  • Combine all the ingredients in a small bowl and mix well. Spread over the top of the loaf.
  • Place in the center of the oven, and bake for 45-50 minutes. Let the loaf cool slightly before slicing.

Notes

 * Use ketchup instead, if desired.
