Vegan Blue Cheese Dressing (Vegan)
This vegan blue cheese dressing is creamy, tangy, and delicious. It is sure to liven up any salad or veggies.
Equipment
- 1 Vitamix, high power blender, or food processor
Ingredients
- 4 oz extra firm tofu
- 1/4 c crumbled extra firm tofu (set aside till the end)
- 2 tbsp raw cashews
- 2 garlic cloves, peeled
- 2 tbsp water
- 6 tbsp lemon juice
- 6 tbsp apple cider vinegar
- 3 tbsp tahini
- 4 tea maple syrup
- 3 tea Dijon mustard
- 1-1/2 tea white vinegar
- 1/2 tea sea salt
- 2 tbsp green onion, finely chopped
Instructions
- Place all ingredients except the green onions and the 1/4 c of crumbled tofu in a blender. Blend until smooth. Approximately 1-2 minutes depending on the power of the blender.
- Fold in crumbled tofu and green onions.
- If you do not have a high powered blender such as a Ninja or Vitamix, soak the cashews in hot water for 30 minutes before blending.
- This dressing will last in the refrigerator for 5-7 days.
