Oh my goodness! These Cajun-Style Vegan Beans are so delicious you do not need to take a trip to Popeyes! These are so much heathier and full of flavor. We always eat the entire pot. They are delicious the same day but I always tend to like them better the next day after preparing. Either way, please try them!

- 1 Instant Pot
Ingredients
- 2 c red beans, rinsed
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 garlic cloves, minced
- 1 tea thyme
- 1 tea smoked paprika
- 2 bay leaves
- 1/4 tea cayenne pepper
- 1/4 tea black pepper
- 4 c vegetable broth
- 1 c water
- 1 tea red wine vinegar
Instructions
- Place beans in a container. Cover with water and soak for 4 hours. This step is not totally necessary and can be disregarded if time does not permit.
- Drain water, rinse and place beans in Instant Pot container.
- Add the remaining ingredients and cook for 45 minutes.
- It's that simple. ENJOY!
