They are delicious the same day but I always tend to like them better the next day after preparing. Either way, please try them!

Ingredients
  

  • 2 c red beans, rinsed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 1 tea thyme
  • 1 tea smoked paprika
  • 2 bay leaves
  • 1/4 tea cayenne pepper
  • 1/4 tea black pepper
  • 4 c vegetable broth
  • 1 c water
  • 1 tea red wine vinegar

Equipment

  • 1 Instant Pot

Method
 

  1. Place beans in a container. Cover with water and soak for 4 hours. This step is not totally necessary and can be disregarded if time does not permit.
  2. Drain water, rinse and place beans in Instant Pot container.
  3. Add the remaining ingredients and cook for 45 minutes.
  4. It's that simple. ENJOY!
