A healthier version of a traditional favorite this Cajun spiced okra gumbo is definitely a family favorite. It is a dish they specifically ask for and one where no leftovers remain. After tasting this dish with the mushrooms, peppers, and seasoning, we can longer eat plain okra and tomatoes. We serve it over rice.
Cajun Spiced Okra Gumbo
Ingredients
- 4 garlic cloves, minced
- 1 small yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 tbsp flour, whole wheat
- 2 cups vegetable broth, low sodium
- 1 can diced tomatoes, 14-1/2 oz.
- 2 cups mushrooms, quartered
- 1 bag sliced okra, frozen 16 oz.
- 1 tbsp Cajun seasoning spice blend
Instructions
- Add garlic, onion, and peppers to a stock pan with 2 tbsp. of water and cook until translucent, adding small amounts of water as needed to prevent sticking.
- Stirring constantly, sprinkle in flour and continue to cook for 4 to 5 minutes to make the "roux." Add additional water in small amounts, if needed.
- Add in the vegetable stock and diced tomatoes and bring to a simmer.
- Stir in remaining ingredients and return to a simmer, cover, reduce heat to a slow simmer and cook until thickened.
- Serve over rice or with a crusty bread. Enjoy!
