Avocado Toast

This twist on avocado toast is so delicious and a super healthy way to eat it! It uses a “slab” of toasted sweet potato as the toast with delicious ingredients such as avocado, tomatoes and pumpkin seed to top it off. A treat that is so delicious and healthy. It can be eaten as a breakfast, served as an appetizer or enjoyed as a treat at a special occasion.

Avocado Toast

This twist on avocado toast uses a sweet potato for the base. It is topped with yummy and delicious ingredients such as avocado, tomatoes, and pumpkin seed.

Ingredients
  

  • 1 large sweet potato
  • 1 large avocado
  • 1 med tomato
  • garlic salt
  • pumpkin seed for garnish

Method
 

  1. Start by washing and cooking the sweet potato. It needs to be slightly soft but not mushy. You can microwave, boil or bake in the oven.
  2. For example, if using the microwave, for a large potato, wash, prick the skin a couple of times on each side, wrap in a damp paper towel and place in the microwave for approximately 3 minutes. Test softness, flip and cook an additional 2 minutes.
  3. Once the sweet potato is soft, slice into 1/4 inch "slabs" lengthwise.
  4. Place the slices in the toaster, toaster oven or air fryer to slightly brown. Watch carefully so they do not burn.
  5. While the slices are browning, peel the avocado and scoop out the inside. Mash the avocado with a fork.
  6. Wash and thinly slice the tomato.
  7. Remove the sweet potato slices from the toaster and top with the mashed avocado and sliced tomato.
  8. Sprinkle with garlic salt and garnish with the pumpkin seed.
  9. Enjoy this twist on avocado toast! So delicious!
