Broccoli Stuffed Potato
Ingredients
- 1 large Russet potato
- 1 16 oz broccoli florets, frozen
- 1 tbsp vegan parmesan cheese, recipe link below
- salt to taste, if desired
Instructions
- To cook broccoli, follow the directions on the package. While the broccoli is cooking, begin the next step below.
- Wash a large Russet potato, using a fork or knife prick a few holes on each side of the potato and wrap in a moist paper towel.
- Place in microwave for 3 minutes. Flip and cook 3 minutes longer. Potato should be soft when a knife is inserted all the way through. You may need to adjust cooking time depending on the size of the potato.
- Strain broccoli from water and set aside.
- Remove potato from microwave and place on a small plate or in a bowl. With a knife, slice potato open lengthwise. Take caution as the potato will be hot.
- Gently fluff potato with a fork and then spoon broccoli over and into the potato. Top with a sprinkle of vegan parmesan cheese.
