Method
- Place all ingredients in a blender or food processor and blend until smooth. Blend really well for a smooth texture.
- Divide among individual serving glasses and chill for at least 1 hour before serving.
- Just before serving, garnish with fruit topping and mint leaf, if desired.
- Enjoy!
- Note: Once the pudding has chilled it will change to a firmer consistency. You can add more plant milk for a creamier texture.
