This vegan blue cheese dressing is creamy, tangy, and delicious. It is sure to liven up any salad or veggies.

Equipment

  • 1 Vitamix, high power blender, or food processor

Ingredients
  

  • 4 oz extra firm tofu
  • 1/4 c crumbled extra firm tofu (set aside till the end)
  • 2 tbsp raw cashews
  • 2 garlic cloves, peeled
  • 2 tbsp water
  • 6 tbsp lemon juice
  • 6 tbsp apple cider vinegar
  • 3 tbsp tahini
  • 4 tea maple syrup
  • 3 tea Dijon mustard
  • 1-1/2 tea white vinegar
  • 1/2 tea sea salt
  • 2 tbsp green onion, finely chopped

Instructions
 

  • Place all ingredients except the green onions and the 1/4 c of crumbled tofu in a blender. Blend until smooth. Approximately 1-2 minutes depending on the power of the blender.

  • Fold in crumbled tofu and green onions.

  • If you do not have a high powered blender such as a Ninja or Vitamix, soak the cashews in hot water for 30 minutes before blending.
