Creamy Lemon-Tahini Dressing | Oil-Free

Ingredients
  

  • 1/4 c tahini
  • 2-3 tbsp fresh lemon juice, adjust to taste
  • 2 tea Dijon mustard
  • 2 tea maple syrup
  • 1/2 tea salt, optional
  • 1-2 cloves garlic, minced
  • 2 tbsp ice-cold water to thin out dressing

Method
 

  1. Whisk the tahini, lemon juice, Dijon mustard, maple syrup, salt, and minced garlic in a small bowl. Mix well.
  2. Add 1 - 2 tablespoons of ice cold water to thin the dressing to a desired consistency.
  3. Taste and adjust ingredients as needed. I sometimes add extra lemon juice for a more lemony flavor.
