Simple and Delicious Overnight Oats

I love the simplicity and deliciousness of overnight oats. The convenience of grabbing a jar out of the fridge and being on the go makes breakfast a breeze. The creaminess and variety you can create with this overnight oats recipe is spectacular. You can add any type of fresh or frozen fruit from mango, blueberries, peaches, apples, bananas, cherries and the list goes on. Some people like savory oats; while others add riced cauliflower or spinach. There is a chocolate version I truly enjoy and will eat sometimes as a dessert. Top your oats with peanut butter, almond butter, coconut flakes, etc. So simple, yummy and delicious.

Ingredients
  

  • 1-1/2 cups old fashioned oats, divided into 3 - 1/2 c servings
  • plant based milk, (soy, almond, oat, your preference)
  • cinnamon, if desired
  • fruit - fresh or frozen fruit of choice
  • cacao, if desired
  • dairy free chocolate chips, if desired
  • maple syrup, if desired

Equipment

  • 3 jars or 2 c containers w/ lids
  • measuring spoons
  • measuring cup

Method
 

  1. Place 1/2 c of old fashioned oats in each jar.

  2. Slightly cover the oats with a plant-based milk.

  3. Stir in 1/4 of teaspoon of cinnamon to each jar, if desired

  4. Add 1-2 tablespoon of maple syrup to each jar, if desired
  5. Top with desired fruit. If using chopped apple, stir in the apple to prevent in from turning brown.

  6. For chocolate oatmeal, stir in 1/2 to 1 tablespoon of cacao powder along with 1 tablespoon of dairy-free chocolate chips

  7. Top any jar with other toppings such as peanut butter, almond butter, coconut flakes, etc. Make them your own!
