- Sauté the onion over medium heat. When it becomes translucent, add the minced garlic and cook for an additional minute.
- Add 1 c. water and the remaining ingredients, except for the rice. Simmer until tomatoes are soft. Smash the tomatoes with a spoon or masher.
- Add the rice and cover the pot. Reduce the heat to low and cook for 20 minutes.
- If desired, use an immersion blender to create a smoother texture for the soup.
Notes
This is truly a rustic version of tomato soup as it includes the seeds as well. If you do not like the consistency with the seeds, remove them when chopping the tomatoes.
