Rustic Tomato Soup

This tomato soup recipe has all the flavor without the heavy cream. It is dairy free and oil-free. Tomatoes are the major dietary source of the antioxidant lycopene, which as been linked to many health benefits, including reduced risk of heart disease and cancer. Lite and tasty!

- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 4 Roma tomatoes, chopped
- 1/2 tsp thyme
- 1/4 salt, option or to taste
- 1/4 tsp black pepper
- 1/8 tea cumin, ground
- 1/2 c rice, cooked
- 1/4 tea crushed red pepper, optional
Sauté the onion over medium heat. When it becomes translucent, add the minced garlic and cook for an additional minute.
Add 1 c. water and the remaining ingredients, except for the rice. Simmer until tomatoes are soft. Smash the tomatoes with a spoon or masher.
Add the rice and cover the pot. Reduce the heat to low and cook for 20 minutes.
If desired, use an immersion blender to create a smoother texture for the soup.
This is truly a rustic version of tomato soup as it includes the seeds as well. If you do not like the consistency with the seeds, remove them when chopping the tomatoes.
