Fudgy Vegan Brownies

These fudgy vegan brownies are so chocolaty and moist. The brownies are made with sweet potatoes, oat flour and peanut butter as the main ingredients. These ingredients make for such a moist and fudgy consistency. Completely delightful! It is hard to eat just one.

- 2/3 c oat flour
- 1 tsp baking powder
- 1/2 tea salt
- 1/2 c cocoa powder
- 1 tbsp flax seed meal
- 3 tbsp water
- 1/2 c sugar
- 1/4 c maple syrup
- 1/2 c natural peanut butter
- 1 c roasted sweet potato puree
- 1 tsp vanilla
- 1/2 c chocolate chips, dairy-free
Preheat the oven to 350°F. Line the bottom of an 8x8 baking pan with parchment paper.
In a small bowl, mix together the flax seed meal and water. Allow it to sit for 5 minutes.
In another bowl, mix together the oat flour, salt, and cocoa powder then set aside.
In a large bowl or food processor, mix together the sugar, peanut butter, sweet potato puree, maple syrup and vanilla extra and mix until smooth.
Combine the flax seed mixture with the sweet potato mixture.
Fold in the dry ingredients along with 1/4 c of the chocolate chips just until it is combined. Pour the batter into the prepared baking pan, it will be thick.
Smooth the batter evenly in the baking pan and sprinkle with the other 1/4 c chocolate chips.
Bake at 350°F for 25 minutes until set. Remove from the oven and allow the brownies to cool then cut and enjoy!
