Cuisine American
- 18 Carrots
- 3/4 cup Tamari sauce (low sodium)
- 3/4 cup Apple Cider Vinegar
- 3/4 cup Vegetable broth - low sodium
- 3 TBSP Liquid smoke
- 3 tsp yellow mustard
- 3 tsp Pickled jalapeño juice
- 1-1/2 tsp onion powder
- 1-1/2 tsp garlic powder
- 18 hot dog buns, preferably wheat
- chopped onion, relish, mustard and all the trimmings for the carrot dogs
Peel the carrots and cut into bun length. Round off the ends if desired to make them look more "dog" like.
Boil carrots in water until they are fork tender. Approximately 10-15 minutes. Keep a close eye so you do not overcook.
Drain the carrots, and rinse immediately under cold water to stop the cooking. Drain well and place in a large Ziplock bag.
Mix all the marinade ingredients together and pour into the bag of carrots.
Marinate for 4-6 hours or overnight.
Grill the carrots on an open grill, basting occasionally.
Turn occasionally to create blackened grill marks on each side of the carrots. Remove when heated through.
Place each carrot in a bun and add the desired toppings. Enjoy!
