Creamy Cilantro Sauce

This Creamy Cilantro Sauce is unbelievably scrumptious! The cashews make it so smooth and creamy. It goes well with any type of Mexican food and I also call it my everyday sauce. Why? Because I like it on everything!

Course Dressing and Sauces
- 1 c cashews, see note below
- 1/2 c water
- 1/2 lime, juiced
- 1/2 tea salt, optional
- 1/4 c nutritional yeast
- 1 jalepeno, small
- 1 garlic clove
- 1/2 tea cumin
- 1/4 tea smoked paprika
- 1/2 head of cilantro
Place all ingredients in the food processor.
Blend until smooth, approximately 2 minutes.
Note - if not using a high speed blender, soak the cashews in hot water for 2 hours or soak overnight.
