Creamy Chocolate Pudding - Vegan Style

This oh so creamy dark chocolate pudding is sure to please any chocolate lover. Bonus...without guilt! Because it is made with cacao powder and plant-based milk, you skip all the fat that normally comes with regular pudding. A healthy but oh so delicious version of an all-time favorite!

Ingredients
  

  • 1/2 c unsweetened cacao powder
  • 2 tbsp corn starch or thickener
  • 1-1/2 c nondairy milk, divided
  • 5 tbsp maple syrup
  • 1/2 tea vanilla extract

Method
 

  1. Place cacao powder in cornstarch in a small saucepan. Over medium heat, whisk in approximately 1/2 cup of milk until blended.
  2. Once combined and blended, stir in the remainder cup of milk and the maple syrup. Continue to stir until thoroughly combined.
  3. Cook the mixture over medium heat, continually whisking for 2-3 minutes or until it becomes bubbly and forms a thick sauce.
  4. Remove from heat. Serve immediately or store in an airtight container up to a week. ENJOY!
