Creamy Chocolate Pudding - Vegan Style

This oh so creamy dark chocolate pudding is sure to please any chocolate lover. Bonus...without guilt! Because it is made with cacao powder and plant-based milk, you skip all the fat that normally comes with regular pudding. A healthy but oh so delicious version of an all-time favorite!

Ingredients
  

  • 1/2 c unsweetened cacao powder
  • 2 tbsp corn starch or thickener
  • 1-1/2 c nondairy milk, divided
  • 5 tbsp maple syrup
  • 1/2 tea vanilla extract

Instructions
 

  • Place cacao powder in cornstarch in a small saucepan. Over medium heat, whisk in approximately 1/2 cup of milk until blended.
  • Once combined and blended, stir in the remainder cup of milk and the maple syrup. Continue to stir until thoroughly combined.
  • Cook the mixture over medium heat, continually whisking for 2-3 minutes or until it becomes bubbly and forms a thick sauce.
  • Remove from heat. Serve immediately or store in an airtight container up to a week. ENJOY!
