Cream Beet Dip

If you are trying to incorporate more beets into your diet, this Creamy Beet Dip can be a delicious addition to any meal. Made with healthy ingredients such as walnuts, vegan Greek yogurt, tahini, lemon and garlic, it can be used as a spread for a sandwich or pita bread, a veggie dip, a topping for a salad, and the possibilities are endless.  It is also oil-free and dairy free!
Beets are a powerful antioxidant which can aid in reducing heart disease, lowering blood pressure, and supporting gut health. This Creamy Beet Dip recipe allows for variety in order to add this hearty root vegetable to your diet. The color is magnificent and the taste will wow you as well!

Ingredients
  

  • 2 roasted beets, medium size
  • 1/3 c walnuts
  • 1/3 c plain yogurt, vegan
  • 2-3 tbsp tahini
  • 1/4 lemon, juiced
  • 1-2 garlic cloves
  • 1/4 tea cumin

Equipment

  • 1 food processor or blender

Method
 

  1. Add the beets, walnuts, tahini, yogurt, lemon juice and garlic to the blender.
  2. Blend well to thoroughly mix all of the ingredients.
  3. Taste and make any adjustments to ingredients as necessary.
