These cookies are my all time favorite cookie and have been my go-to for years. The cinnamon, almond butter, and sweetness of the maple syrup make them delicious. There are nine ingredients and it takes 20 minutes total to make and bake the cookies. They are the perfect treat all year long. One of my families favorites for sure. Modifications we sometimes make...one of my favorite ways to enjoy these cookies it to add dried cranberries and walnuts. Other varieties my family enjoys...omit the cinnamon and add dairy-free chocolate chips, add nuts such as walnuts or pecans, or substitute the almond butter for peanut butter. The variety is endless...
1/2 cupraw creamy almond butter (best if it is a little runny)
3/4cupmaple syrup
1teapure vanilla extract
Instructions
Preheat oven to 350° F. Line a baking sheet with parchment paper and set aside.
In a medium size mixing bowl, whisk together the almond flour, oat flour, and whole oats, baking soda, cinnamon and salt.
In a small mixing bowl, whisk together the almond butter, maple syrup and vanilla extract.
Pour the wet ingredients into the dry while stirring. Stir well to thoroughly combine. The dough will be sticky.
Using your hands, roll the dough, about 1 tablespoon at a time, into a ball and place on the parchment lined baking sheet. Dampen your hands slightly as needed to prevent the dough from sticking to your hands. Continue until all the dough has been used. Be sure to space the balls of dough out on the baking sheet with a few inches between so they can spread out to perfectly round cookies.
Bake for 8-10 minutes, until they are starting to firm up around the edges.
Allow to cool on the baking sheet for a few minutes before transferring the cookies to a wire rack to cool completely.
EAT and ENJOY!
These cookies are best when you enjoy them the day of baking. However, they also freeze well. Simply freeze in a freezer safe container and take out of the freezer as needed.
