This Black Bean and Corn Salsa is such a quick recipe to create and is quite versatile. Created with black beans, corn, fresh tomatoes, green onions and spices you probably have on-hand. It is great as a dipping salsa or a topper for items such as sweet potatoes!

Ingredients
  

  • 1 can black beans, drained and rinsed
  • 1 cup corn, thawed or canned
  • 3/4 cup diced tomato
  • 1/4 cup diced green onions
  • 1 tsp cumin, adjust to taste
  • salt and pepper to taste, optional
  • 1/4 cup chopped cilantro
  • 1/2 lime, juiced

Instructions
 

  • Combine the black beans, corn, tomato, green onion, cumin, salt and pepper (if using) along with lime juice.
  • Stir well to combine and taste to adjust spices.
  • Top with cilantro.
  • Serve and enjoy!
