This Black Bean and Corn Salsa is such a quick recipe to create and is quite versatile. Created with black beans, corn, fresh tomatoes, green onions and spices you probably have on-hand. It is great as a dipping salsa or a topper for items such as sweet potatoes!

- 1 can black beans, drained and rinsed
- 1 cup corn, thawed or canned
- 3/4 cup diced tomato
- 1/4 cup diced green onions
- 1 tsp cumin, adjust to taste
- salt and pepper to taste, optional
- 1/4 cup chopped cilantro
- 1/2 lime, juiced
Combine the black beans, corn, tomato, green onion, cumin, salt and pepper (if using) along with lime juice.
Stir well to combine and taste to adjust spices.
Top with cilantro.
Serve and enjoy!
